Apricot-Cream Pasta





For those of you always on the run, I discovered a very simple, quick and exquisite dinner meal last night. It's bound to please your partner and finally convince him/her to buy you that dainty and oh-so darling Tiffany Heart pendant.

It's called "Apricot Cream Pasta". It's a fusion of my own creativity and another recipe I found on a google search. Once you're all done, the final product looks fruity and kitsch, a perfect Tuesday Night dinner. Here's what you need:

1 Box of Rigatoni Pasta

8 oz Sour Cream (Half of the regular-size container)

2 Chicken Breasts, cut in cubes

1/3 cup Chopped Green Onion

Salt and Pepper to taste

8 Apricots, thinly sliced

Cook noodles. In a medium to large saucepan, simmer sour cream 3 minutes. Add onion, chicken & apricots; continue simmering 2 minutes. Pour over pasta.

Transfer to a small baking dish, grate cheese over it and bake for 5 minutes.

Garnish with onion and apricot.
